Fresh-cut red cedar unfolds into hard candy, green apples, nail polish, rye bread, and ripe black cherries on the nose. Vague cedar on the palate becomes fruity and floral, then hot and spicy. Distant licorice root is restrained by German rye bread. Earthy but not dusty, with a sweet, hot, effervescent spiciness. Fades in a long, tingling finish. Complex and expressive: rich yet ethereal.

Ultimate Beverage Challenge 94 points - Exquisitely deep, smoky and complex nose of game meats, baseball glove and toasted earth with undertones of dried cherry. Once in the mouth it is light on its feet yet brooding with bacon fat, stewed peaches and cinnamon and leads into a delicately smoky finish. (Apr 2014)
The rye has an aroma of salted caramel, buttered popcorn and toffee. The aroma gives way to complex notes of sweet vanilla, milk chocolate, roasted coffee and honeyed oak, which are nicely balanced with a subtle spicy undertone, and lead a sweet, elegant finish.
