Apothic Dark seamlessly integrates flavors of blueberry and blackberry with enticing notes of coffee and dark chocolate for a rich and smooth mouthfeel with layers of texture. In the cellar, the grapes were fermented at a maximum of 90 degrees to increase the extraction of dark jammy fruit. A variety of yeasts were used to bring out unique flavors. Following fermentation, the wine was influenced by a variety of oak to add complexity and enhance the coffee and dark chocolate flavors.
|Inspired by ”Apotheca,” a mysterious place where wine was blended and stored in 13th century Europe, the wines of Apothic are truly unique in style and taste.
Our winemaker Boyd Morrison crafts bold, captivating Apothic blends by using only the most distinctive California grapes. From vintage to vintage, Boyd lets the character and flavor of the individual varietals guide the shape of each blend.
