This cool climate vine is late ripening, requires a long growing season and a moderately drained but not too dry hillside microclimate. Casalnova’s cool vineyard area in the region of Conegliano, north of Venice, is close enough to the Italian Alps that the late-ripening grapes are not harvested until late October or early November.When fermentation stops with winter’s advent, the wine is left with some residual sugar and carbon dioxide that makes the wine sparkling.
Casalnova Prosecco is ideal as an aperitif to enjoy with good company. It also goes well with all light dishes, such as soups, white meats and fish – and is excellent with many desserts.
