Licorice-red in its scent and as bright as a lambrusco in flavor, this clean, slightly sweet sparkler would be a festive match for roast turkey. |Paringa, located 150 miles northeast of Adelaide in South Australia, is owned by David Hickinbotham. The vineyards cover 1,700 acres of prime Riverland property that sits on sandy loam topsoil over limestone. David and winemaker John Gledhill maintain low yields (5-6 tons per acre), practice careful canopy management and source water from the nearby Murray River. Kym Teusner is consulting winemaker.
