Wine Enthusiast 85 points - This cocktail-friendly absinthe is mild and herbaceous, hinting at fennel, lime peel, and a fresh hint of celery. Made with beet neutral spirits, it has a faint sweetness that plays around the edges. Light straw in the glass, louching to bright opalescent. - K.N.
Bursting with strong aromas of anise, cumin, fennel and sage, it opens up beautifully. Bright and robust on the palate, it displays subdued and exquisite notes of walnut, pine and sea-like minerals. The finish is complex and lingering with a welcome hint of pickled fennel.
Versatile and cocktail-friendly. This absinthe is relatively light-bodied, with a pale translucent green color and an overwhelming licorice-candy scent, like a box of Good & Plenty. With ice water, fennel flavors become more pronounced. Although this isn't a sweet absinthe, it blended easily and pleasantly with sugar. 85-89 Points Wine Enthusiast
