Recently receiving GOLD at the Royal Melbourne Wine Show, the wine shows ripe characters of peach and rockmelon, which are striking on the nose. This leads into a fresh and floral front palate where there is an up-front sweetness, adding to the wines` lengthy oak richness. Harvested early to mid season, Chardonnay in the Riverina and Riverland regions exhibits ripe rockmelon and peach characters, without being overly tropical in flavour. The fruit is crushed though widened rollers and then gently air bag pressed. Free run and pressings components are kept separate, using only the free run for Yellow Tail Chardonnay. The juice is then cold settled and lightly fined to remove harsh phenolics before being fermented by specially selected yeast strains. As soon as the fermentation is complete, the wine is cold stabilised and gently oaked for 6 months prior to bottling.

Food pairing
The sweet and savoury palate lends itself to both pasta or meat dishes, or you could "throw some shrimp on the barbie" perhaps.
